Why is the old man in Breaking Bad called Heisenberg?

In the sixth episode of the first season, the reason why Lao Bai was called Heisenberg was because he made it up randomly in order to prevent the other party from knowing his real name when he first traded with Tuco. As a chemistry teacher, Lao Bai paid more attention to science, so he casually named himself Heisenberg.

Werner Heisenberg (December 5, 1901 - February 1, 1976) was a German physicist and one of the founders of quantum mechanics.
