Introduction to wheat cakes

Wheat cake is one of the traditional snacks of the Han people in Zhejiang Province. Currently, the wheat cakes in Pujiang, Jinhua, Ningbo, Taizhou and Wenzhou in Zhejiang are the most famous. Wheat cakes can be either sweet or salty. The sweet ones are filled with sugar and sesame seeds, while the salty ones are filled with dried shrimps, chopped green onions, diced meat, dried fragrant spices, or mixed with eggs. Roll them out into the size of a round fan and bake them until cooked. In rural areas, skillful peasant women often entertain guests with wheat cakes, or take a few wheat cakes to work in the fields as dry food during busy farming periods. The wheat cake legend is that in the early Southern Song Dynasty, the Jin soldiers launched a large-scale attack on the Song Dynasty. The treacherous prime minister Qin Hui paid the invaders money to surrender and remained in peace, but he attacked the famous Jin generals. The majority of patriotic soldiers and civilians hated Qin Hui's traitorous behavior, so they put wheat flour and oil into a drying cylinder and baked it. Named Maitan Cake (Selling Country Cake), this cake has a unique flavor, crispy and fragrant. Travelers always have dry food. Over time, it became known as wheat cake, but in some areas of Zhejiang, some people still like to call it wheat cylinder cake (traditional national cake).
