The history of Quanjude can be traced back to a farmer named Yang in Qing Dynasty. Yang is from Yangjiazhai, Jixian County, Hebei Province. He is the youngest of four sons in the family. He has been quiet since childhood, but he knows what to do. In the early years of Xianfeng in Qing Dynasty, when Yang was a teenager, his hometown was flooded and he came to Beijing to make a living. At first, Yang made a living by helping people do short-term jobs and mending clothes. Later, he rented a pile house in Jinger Hutong outside Qianmen, did some small business, saved some money, and set up a duck stall in front of Yi Tong Seafood Store outside Qianmen Street, specializing in chickens and ducks. 1864, there was a preserved fruit shop opened by Shanxi people in the meat market hutong. After being introduced, Yang opened a grocery store and a hanging stove shop himself. The name of this dried fruit candied shop is Dejuquan, which means "gathering wealth by virtue, making money by virtue". Yang hired a Feng Shui gentleman before opening the shop. After visiting the new store twice, Mr. Yang said, "This is a treasure trove of geomantic omen, and its future is limitless. It's just that this store was unlucky in the past. If you want to deal with it, unless you reverse the old font name of' Dejuquan' and change it to' Quanjude', you will not be able to embark on the smooth road. " As soon as Yang heard this, he put the word "Du" in his name on the new plaque. For one thing, "Jude" means Jude, so he can flaunt the business in the store and talk about virtue. Thus, the font size of "Quanjude" was determined.

After the font size was decided, Yang began to painstakingly manage this furnace hanging shop. At that time, the business of another roast duck restaurant in Mishi Hutong was booming, and the demand for roast duck was in short supply, so Yang wanted to roast duck by roasting pigs. After many experiments, the roast duck finally succeeded, and it was delicious. Later, Quanjude's business was booming, and then Yang tried his best to invite the roast duck master, Master Sun of Jinhua Pavilion. The arrival of Master Sun means that Quanjude has mastered all the techniques of hanging roast duck in Qing Palace. Master Sun changed the original oven into a hanging oven. The oven has a large height and a wide hearth. One oven can roast more than a dozen ducks and roast duck blanks at the same time. The duck he roasted is purple, and its skin is as smooth and beautiful as silk. It tastes crisp, tender, crisp and delicate. At the same time, the unique way of "eating four ducks" has also attracted many customers for Quanjude. In the 27th year of Guangxu reign in Qing Dynasty (A.D. 190 1), Quanjude built a new building, expanded its business and added various kinds of stir-fry dishes. During the Republic of China, Quanjude invited a famous chef, Wu Xingyu, from Tianjin Deng Ying Building, which added a lot of color to the restaurant. Later, after Yang died, his son and three other brothers continued to run Quanjude and opened a branch in Tianjin. Since then, Quanjude Roast Duck is very famous in Beijing and Tianjin. However, after the July 7th Incident, Quanjude's business declined.

After the founding of New China, Quanjude quickly resumed its development. 1950 set up Beijing Xidan branch (later decided by the government, changed to Hongbin Building), 1959 set up Wangfujing branch, 1964 expanded the head office of Qianmen Wairou Market.
