What is a pot helmet?
Guo Kun is one of the eight eccentrics in Shaanxi. People call it "a kettle helmet like a kettle lid", that is, it looks like a helmet, which is also called a kettle helmet as the name suggests. Guo Kui has a fine craft and is known as "dry, crisp, white and fragrant". Hard and chewy, crisp inside and crisp outside, white and shiny, mellow and delicious.
According to legend, when the officers and men built a dry tomb for Wu Zetian in the Wu Zhou Dynasty, because of the huge project, a large number of migrant workers were busy working, and there were no cookers on the construction site, so the officers and men used helmets as cookers to bake cakes, so they were named Guo Kun.
Guo kui is a kind of coarse scone in Shaanxi, with a diameter of about 20 cm to 50 cm. After it is cooked, it can be cut from the edge to hold all kinds of food, the most typical of which is spicy seeds in oil or Chili sauce.
Guokui is a folk snack in northwest Shaanxi, Gansu, Ningxia, Qinghai and Xinjiang, especially in Shaanxi, Gansu, Ningxia and Qinghai. This is a gift from my grandmother to her grandson He, which later developed into a convenient food. People often say: "There are four treasures in Ganxian, such as Guo Kui, dried noodles, bean curd brain and tea crisp."
Cucui in Ruzhou is a popular pasta, and there are good stalls in Zhangzhuang, Nankou of Cultivation Road, Xiguan and Dongguan.
Guo kui is characterized by mixing flour with oil and making it on a fire-resistant kang. It is hollow, crisp outside, layered inside, thick at the edge, and does not leak soup when absorbing juice. The pot helmet with pig's head meat is a perfect match for Ruzhou snacks: cut the pig's head meat into pieces and put it in the pot helmet just out of the pot. The hot noodle fragrance sets off the meat fragrance to the extreme, while the greasy fat is absorbed by the pot helmet and becomes invisible, fragrant, crisp and soft, which is very enjoyable to eat.

There are many different versions, including Jingzhou, Henan, Sichuan and Shaanxi.

In Shaanxi, a stone is round, about a foot long in diameter, about an inch thick and weighs about 2.5 kilograms. Traditionally, this is a gift from grandma to her grandson when she is one month old. Together with biang biang noodles, it is considered to be one of the "eight eccentrics in Guanzhong".
2. Jingzhou style
This style is to fill dough (flour, water, yeast, sugar) with stuffing (chicken, beef, vegetables) and then put it in a cylindrical charcoal oven.
