Creation background

In the 23rd year of Daoguang (1843), a writer and poet in Zunyi, Guizhou Province, was called Zhengzhen, a great scholar in Southwest China. He went from Zunyi to Renhuaitang to visit Pinghan, the former magistrate of Zunyi, and passed through Maotai Town. He saw that Maotai was surrounded by mountains and rivers, with lush vegetation, which was really a treasure house for wine making. The local people told him that "if you take natural gas and the spirit of the underground, people will be clean, the pit will be old, the fire will be slow, and there will be nothing else."

After listening to Zhengzhen, I admired the wisdom of Maotai people and praised their superb brewing technology. Therefore, it is recorded in Zunyi Prefecture Records: "Maotai Village in the west of Renhuai City is the first in Guizhou Province. The material is pure sorghum and coarse grains are used twice. The method is to put the cooking materials and distiller's yeast into the cellar and bake them in the next month. Daqu is made of wheat and is called Baishui Daqu. Qianren is called Daqu liquor, and Maotai is burned. "
