Tea is one of the traditional drinks in China, and there are many kinds of tea. Picking tea, first spring tea, tomorrow tea and before rain tea are four common teas. Their difference mainly lies in the different picking time and production technology. This paper aims to explore the characteristics and differences of these four kinds of tea, so as to help readers better understand tea.

Materials and methods

This paper adopts the method of literature review, consulting relevant materials and making analysis and comparison. This paper mainly collected the historical background, picking time, production technology, taste and aroma of Toucai tea, Touchun tea, Qianming tea and Yuqian tea.

The first tea picked is the tender leaves picked for the first time after the Spring Festival every year, usually in early March. Its production process is enzyme fixation, rolling and drying, with refreshing taste and rich fragrance.

2. Head spring tea

Touchun tea is a young leaf picked again after the first tea picking, usually in early April. Its production process is similar to that of head-picked tea, but the taste and aroma of tea are stronger than that of head-picked tea because of the late picking time.
