Local delicacies: soup
Years ago, when I first ate soup mixed with (chān) locally, I thought it was ginseng soup (forgive me for being uneducated, it’s terrible). The sign of the snack shop said 10 yuan a piece. I thought the bowl was very cheap. When I brought it to me, I was dumbfounded. It was just lean pork liver soup. It had to be called mixed soup. It seemed very novel.
But if you think about it carefully, it may be more relevant to people's lives to call it soup. Doping means mixing various substances together. You can mix it with lean pork liver, lean pork kidneys, or lean pork liver kidneys. The key is to mix it well, no matter what, it will taste delicious.
From being disdainful at first to doing as the locals do, I have gradually accepted and fallen in love with this local delicacy, and even often get into the kitchen and make it myself.
The method of adding soup is actually quite simple. Generally, you can choose one or two of lean pork liver and kidneys, but for the rich taste, I usually like three. Mix them together.
1. First, prepare the ingredients. Lean meat, pork liver, pork kidney (kidney), sweet potato flour (must have sweet potato flour, so that it has local characteristics), onion, ginger, garlic, and coriander.
Slice the lean pork liver, cut the pork kidneys into flowers with a horizontal knife and a vertical knife, put them in a bowl, add cooking wine, vinegar, cornstarch, salt, and minced ginger and mix well. Marinate for about 15 minutes.
(Note: After buying the pork liver and kidney flowers, rinse them under the tap first, then soak them in clean water or salt water for 1-2 hours to remove toxic substances. If it is urgent For cooking, you can cut it into small pieces, wash it gently, and then rinse it thoroughly)
2. Soak the sweet potato starch in warm water in advance. If you forget, you can soak it in boiling water and it will be ready in about 5 minutes.
3. Cut onions, ginger, garlic, etc. and set aside.
4. Boil a pot of water, add shredded ginger, add some oil, then add sweet potato starch, lean pork liver kidneys, stir with chopsticks, and cook briefly A few minutes will make it cooked; if it takes too long, the meat will become stale and unpalatable.
5. Add garlic cloves, add more black pepper, sprinkle with chopped green onion, put it into a soup bowl, and remove from the pot.
6. If you like spicy food, you can have a small dish of chili sauce. But in fact, because of the addition of black pepper, although it is not noticeable, it is already spicy.
Just like this soup, it looks very marketable and smoky, but it is an indispensable delicacy on the local people’s table. A bowl in the morning will satisfy you all day long. Full of energy and comfortable.
Tips:
The soup is rich in nutrients, containing protein, vitamins and various trace elements. Eyes, pork loin nourishes the kidneys and can be eaten by adults and children.
During the production process, it is best to soak the pig liver to remove toxins, because we know that the liver is a detoxification organ and there will be some toxin residue. Cut the pork loin in half and be sure to remove the white fascia inside. In addition, you should also pay attention to removing the fishy smell from the pork liver and kidneys. The secret is to add more ginger and pepper.
